Vegan Chocolate Bread Pudding

Chocolate pudding reminds me of my younger days. Not to over exaggerate I can still relish the taste of the chocolate bread pudding my mom used to make for us and we could hardly wait for the blessed container to be out of the steamer or cool down to be devoured. Yes, my entire family would love the concoction of bread, milk and eggs that would turn out into a delicious  and moist dessert.

So now that with all valid reasons that I am trying my amateur hands at the skill of trying out vegan desserts, there was a bleak chance that I would omit the chocolate bread pudding from my to-do list. So here they are, moist, delicious and completely vegan puddings.

The overly simple recipe:

  • 5-6 slices of bread, either brown or regular sandwich bread.
  • 2 cups of soy milk. I used chocolate soy milk here.
  • 3Tbsps of sugar
  • 2-3tbsp cocoa powder
  • 1tsp of instant coffee powder
  • 1/4 tsp of baking powder
  • 2 tsp of vanilla essence
Cut the sides of the bread and then into pieces and soak them for  15-20 minutes in half of the milk quantity. In no time the sponge breads will soak it all up and make it easy for you to mash the breads in a smooth paste. It is now ready for the additions of the remaining milk, sugar, vanilla essence, coffee, cocoa and baking powder and for a proper stir to convert all in a smooth mixture.
To give a small twist I decided to serve them in colourful portions in my silicon cupcake moulds. 🙂
Preheat the oven at 180 degrees. Place the moulds in the tray and place them in the oven. Before closing the oven door pour some water in the tray such that the moulds are at least covered by 1/4 and let them sit for 30 minutes. The trick to check with your toothpick remains the same and with you will now that your vegan version of the classic bread pudding is ready to come out and cool down before you dig in your spoon and close your eyes for a lip smacking taste.
These puddings came out as a worthy try for me and I don’t recollect any leftovers. 🙂
